Tonight, roommate Quin had planned to make raspberry oat bars to bring over to the weekly Bachelorette Viewing Party. Since I am still in a post-23-birthday-bash-fog, I asked if she would guest post for CP.
I just got home yesterday after nannying in Southampton for a week, which was more of a vacation than work. While there I had the most amazing raspberry oat bars, so I decided to make my own version tonight adapted from Epicurious. Start by toasting 3/4 cup of shredded coconut on 375 for about 8 minutes. In a food processer, combine sugars, flour, salt. Then add the cold butter, cut into pieces. When the dough comes together, combine in a large bowl with the coconut and oats. Reserving 3/4 cup of the dough, place remaining dough in the bottom of a 9X13 pan. Spread on a layer of raspberry preserves and crumble the remaining dough over top. Finish with some more coconut and chocolate chips. Bake for 20 minutes. I may skip dinner and go straight for dessert…
